
Rotisserie chicken nachos are a delicious and easy-to-make meal that can be enjoyed by the whole family. Here is a simple recipe that you can follow while you are starting your new Medium Publication.
Ingredients:
1 Rotisserie chicken, shredded
1 bag of tortilla chips
1 cup of shredded cheddar cheese
1/2 cup of black beans
1/2 cup of corn
1/2 cup of chopped tomatoes
1/4 cup of sliced black olives
1/4 cup of chopped green onions
1/4 cup of chopped fresh cilantro
Sour cream, guacamole, and salsa for serving
Instructions:
Preheat the oven to 350°F (175°C).
Arrange a layer of tortilla chips on a baking sheet or oven-safe platter.
Sprinkle half of the shredded chicken over the chips.
Add half of the black beans, corn, chopped tomatoes, sliced black olives, green onions, and cilantro over the chicken.
Sprinkle half of the shredded cheddar cheese over the top.
Repeat with another layer of tortilla chips, chicken, beans, corn, tomatoes, olives, green onions, and cilantro.
Sprinkle the remaining cheese over the top.
Bake in the preheated oven for 10–15 minutes, or until the cheese is melted and bubbly.
Serve the nachos hot with sour cream, guacamole, and salsa on the side.
